Black Urad in its whole form is the most nutritious of all the other forms of this lentil. Whole Gram gives the dishes a dark brown colour and grainy texture. This is a tough lentil and requires more time to cook and it needs to be cooked on low flame. Dal Bhukhara with whole Black Gram as the main ingredient is the dish loved by North India. Dal Bhukhara is a rich, creamy and spicy accompaniment for Rotiss, Phulka and Paranthas. One more delicacy made using Whole Black Gram is Vada. It is a much favoured South Indian breakfast and snack. The texture and colour of Vada depends on the form of Urad dal used. Whole Urad gives the Vada a darker, grainy colour and makes it crunchy.
